Here is healthy veg salad , couscous salad that is just a 5 min recipe at home.
couscous -1 cup
Water -1 cup
olive oil -1 tbsp+ 2tbsp
Lemon juice -2 tsp
salt - 1/2 tsp or to taste
onion -1/2 cup diced
tomato -1/2 cup diced
yellow bell pepper -1/2 cup diced
cooked /canned chickpeas -1/2 cup
cilantro/parsley-1/2 cup finely chopped
grated carrot -1/2 cup
- Boil 1 cup of water.
- Add salt and a tablespoon of olive oil and switch off.
- Add a cup of couscous and let it rest until the water is absorbed.
- To a salad bowl add all the veggies listed in ingredients.
- Top it up with the couscous.
- then drizzle in olive oil and lemon juice.
- Mix it well.
- Couscous salad is ready to serve
