FIVE HEALTHY VEG SOUP RECIPES MADE IN 10 MINUTES

 Here are 5  healthy veg soup recipes made in 10 minutes in a pressure cooker. These soups are so nutritious and aids in weight loss as well.

 DRUMSTICK SOUP

Drumstick soup is a easy soup that can be made under 10 minutes. It is healthy and very tasty.



INGREDIENTS:

Drumstick  -3
Carrot-1 big
Tomato -3
Shallots-4
Garlic cloves -3
Salt-to taste
Cumin powder -1 tsp
Turmeric powder-1/4 tsp
Pepper -to taste

METHOD:

  • crush shallots and garlic in a mortar pestle
  • In a pressure cooker , add 2 cups of water.
  • Put in crushed shallots and garlic
  • Then add in tomatoes, roughly chopped carrot, cut drumsticks one by one.
  • Sprinkle adequate salt, turmeric and cumin powder.
  • Pressure cook for 3- 4 whistles
  • Once the pressure goes off ,open and strain the soup stock.
  • Mash it thoroughly with a potato masher.
  • Simultaneously, heat a cup of water and pour over again on the strainer.
  • Again mash it thoroughly.
  • Add in needed salt and pepper.
  • Serve hot!!!
Serves 3

RADISH SOUP



INGREDIENTS:

Radish - 2 big
Horse gram-1/4 cup
Curryleaves-15 -20 sprigs
Shallots-3
Garlic cloves -3
salt- to taste
Turmeric -1/4 tsp
Cumin powder- 1 tsp
pepper - to taste

METHOD :

*Chop 2 medium sized radish roughly
*To a pressure cooker add 2 cups of water
* To it Add 3 shallots and 3 garlic cloves crushed in a mortar pestle.
*Then add in 1/4 cup of horse gram, 15-20 sprigs of curry leaves
and chopped radish one after other
*Then sprinkle needed salt, turmeric and  cumin powder
*Pressure cook for 4 whistles
*Once the pressure goes off, open the lid and Strain the soup stock
*Then using a masher mash the veggies thoroughly
*Add another cup of water to the cooker and transfer the mashed veggies into  the cooker
*Cook until it comes to a boil
*Again strain it off and give a mash
*Add salt(if needed)& pepper to taste
*Delicious Radish soup is ready
*Serve hot

LADIES FINGER SOUP/OKRA SOUP




INGREDIENTS:

Okra /Ladies Finger -8
Shallots -6
Salt- to taste
pepper - to taste
Turmeric - 1/4 tsp
cumin powder -1   tsp
Sesame oil - 2 tsp

METHOD:

  • Discard the edges of 8 okra, and cut it into halves.
  • Crush 6 shallots in a mortar and pestle.
  • In a pressure cooker , add 2 cups of water.
  • Put in shallots, cut okra, salt, 1/4 tsp turmeric and  a tsp of cumin powder.
  • Pressure cook for up to 3 whistles.
  • Strain the soup stock.
  • Mash the cooked okra thoroughly .
  • Add needed pepper and sesame oil.
  • Serve hot!!!


SPINACH DHAL SOUP




INGREDIENTS:

 Spinach -1 bunch
Moong dhal -1/3 cup
Shallots -3
Garlic cloves -3
Tomato -1
Salt-to taste
Turmeric -1/4 tsp
Cumin powder -1 tsp
Pepper - to taste

METHOD:

  • In a pressure cooker add 2 cups of water.
  • Then add in crushed shallots and garlic
  • Put washed moong dhal , a tomato and bunch of spinach
  • Then sprinkle needed salt, turmeric and cumin powder.
  • Pressure cook for 3 whistles.
  • Once the pressure goes off  open the lid.
  • Strain the soup stock. Mash the veggies with a masher
  • Then again add 1 more cup of warm water over the strained veggies
  • Mash it over again
  • Then add needed salt and pepper, mix well
  • Tasty Spinach soup is ready! Serve hot & enjoy

TOMATO SOUP



INGREDIENTS:

Country tomato -2
Bangalore tomato -2
shallots -3
garlic cloves -3
cilantro -5-6 sprigs
salt-to taste
cumin powder -1 tsp
turmeric -1/4 tsp
pepper- to taste
cilantro - to garnish
Butter-1 tbsp
 

METHOD:

  • Cut two country tomatoes and two Bangalore tomatoes into halves ,discarding the edges
  • Country tomatoes add tanginess and Bangalore tomatoes add color to the soup
  • Crush 3 shallots and 3 garlic cloves in a mortar and pestle
  • To a pressure cooker add 2 cups of water.
  • Put in crushed shallots, garlic cloves, 5 sprigs of cilantro and cut tomatoes
  • Then sprinkle needed salt, 1/4 tsp of turmeric  and a tsp of cumin powder.
  • Pressure cook for up to 3 whistles.
  • Once the pressure goes off, open the lid.
  • Strain off the soup stock.
  • Mash the veggies thoroughly
  • Add needed salt & pepper
  • Put a tablespoon of butter , it adds a nice flavor to the soup
  • Garnish with cilantro
  • Serve hot & Enjoy!!
