CHICKEN SATAY WITH PEANUTSAUCE
here's a classic asian starter recipe chicken satay with peanut sauce which is so simple to make with minimal ingredients and maximum flavors.
INGREDIENTS:
Boneless chicken -150 g
To grind 1:
coriander seeds -2 tsp
salt - to taste
chili powder-3/4 tsp
brown sugar -3/4 tsp
shallots-3
garlic cloves -2
lemon grass stalks -2
soy sauce -1 tsp
For peanut sauce:
To grind:
Roasted peanuts -2 tbsp
garlic clove -1
clove sized ginger -1
coriander powder-1/2 tsp
salt-to taste
chili powder- to taste
coconut milk - 1tbsp
soy sauce-little
Method:
- Blend all the ingredients listed under To grind 1 into a fine paste adding little water.
- Marinade the chicken strips with the ground paste for atleast 1 hour.
- Soak the bamboo skewers in water for 1 hour .
- Thread the chicken into the skewers like shown in the video.
- Place the skewers on the grill and cook on both sides until well done.
- Grind the ingredients listed in peanut sauce into fine puree.
- cook the ground puree in a small pan until the raw flavor goes off and reduce into a dip.
- Serve the chicken satay with a yummy dip
