Soya chunks Kurma
Soya chunks is textured vegetarian protein .It can be consumed in as a substitute of meat protein.This Soya chunks kurma is made in south indian style and tastes so delicious equivalent to mutton kurma.Ingredients:
Soya chunks -2 cuponion -1 finely chopped
tomato -1 sliced
ginger garlic paste -11/2 tsp
coriander powder -2 tsp
chili powder -1 tsp
green chili -2
mint leaves -2 sprigs
cumin powder -1 tsp
chili powder -1/2 tsp
turmeric -1/4 tsp
salt -to taste
To grind:
shredded coconut -3 tbspcashews -4-6
To temper:
Cinnamon -1"cloves -3
cardamom -2
fennel seeds -1/4 tsp
bay leaf -2
cardamom -2
Preparation time:10 min
Cooking Time : 20 min
Method:
- In a pot boil water and add soya chunks and salt.Cook for 5 minutes.Switch off and let it stand for 10 minutes.Then Drain water off and squeeze any excess water from soya chunks.
- In a pressure cooker heat oil and temper with ingredients listed in To temper.
- Then add the ginger garlic paste ,cut green chili and mint leaves.
- Once the raw flavor goes off add the onions and cook until soft and translucent.
- Add the sliced tomatoes to it.
- Put the soya chunks with salt,chili powder, coriander powder, cumin powder, turmeric.
- Mix well and add adequate water.Cover with lid and pressure cook for 1-2 whistle.
- Blend ingredients listed To grind into a fine paste adding little water.
- Once the pressure goes off open the cooker and pour in the blend paste.
- Cook for another 5 minutes.Garnish with finely chopped cilantro.
- Serve with Chapathi/Dosa
