Mushroom Salna/Kaalan Salna

Mushroom/kaalan salna is a famous Tamilnadu delicacy which goes very well with Idli/Dosa/Chapathi/Paratha/Poori.




Ingredients:

Mushroom/kaalan -300 g
oil                          -2 tsp
salt                         -to taste

To grind:

Cashews               -4
shredded coconut-2 tbsp

To fry and grind:

oil                           -2 tsp
whole red chilies    -6-8
Cinnamon              -1/2"
cloves                     -4
fennel seeds            -1/2 tsp
curry leaves            -3 sprigs
shallots                   -10-12
tomato                    -1 sliced
ginger                    - 3 clove size
garlic                      -3 cloves
coriander seeds       -2 tsp
cumin seeds            -1 tsp
poppy seeds            -2 tsp

Preparation time:10 min
Cooking time     : 30 min

Method:

  • Grind the cashews  and shredded coconut into a smooth paste adding little water.This is first paste

  • In a pan heat oil and add cinnamon,cloves,fennel seeds,curry leaves,whole red chili,garlic cloves, ginger.

  • fry for 2 minutes and add coriander seeds,cumin seeds and poppy seeds.


  • Follow it with shallots  and fry until  light golden.

  • Put tomatoes add adequate salt

  • When the tomatoes becomes mushy allow it to cool off and blend it into a smooth paste. keep it aside. This is the second paste.



  • In a pressure cooker heat oil and add the second paste and cook for few minutes.

  • Add the cut mushroom  pieces.Put salt, turmeric and chili powder.

  • Add 2 cups of water and pressure cook for a whistle.

  • Once the pressure goes off open the lid add the first paste and boil it for another 5 minutes

  • Serve over rice/idli/paratha/dosa/biriyani/pulav
