Mutton rezala
Mutton rezala is a bengali dish in which mutton is cooked in yogurt based gravy.Ingredients:
mutton - 400 gshallots paste -1/2 cup
onion rings -1 medium
ginger garlic paste-21/2 tsp
green chillies -8
beaten yogurt -1 cup
salt -to taste
oil -1 tbsp
cinnamon -1 '
cloves -2
cardamom -1
To grind:
Cashew nuts -10
poppy seeds -1 tsp

Method:
- Marinade the mutton with shallot paste, chopped green chili ginger garlic paste,oil and salt and refrigerate it for at least an hour.
- Soak poppy seeds and cashew nuts in water for 30 minutes.
- Blend it into a smooth paste
- Heat oil in a pressure cooker and temper with cinnamon,cloves,cardamom and red chili.
- Add the marinated mutton and fry until the raw smell goes off.
- Then add onion rings .
