Baby Corn masala
Baby corn masala is an interesting vegetarian gravy dish that is made with baby corns in a regular indian onion tomato sauce. It will be a hit when served as a gravy during potlucks/parties too.
Ingredients:
Baby corn(canned) -400 g
onion -1/4 cup cubed
bell pepper -1/4 cubed
coriander powder -1 tbsp
cumin powder -1/2 tsp
kashmiri chili powder -1/2 tbsp
chili powder -1/4 tsp
pepper powder -1/2 tsp
garam powder - sprinkle
kasoori methi/dried fenugreek leaves-1/2 tsp
salt - to taste
oil -2-3 tsp
To fry & grind:
onion -1 cubed
tomato -2
green chili -4
whole cashews -6-7
cinnamon -1/2 inch
cloves -2
fennel seeds -1/4 tsp
star anise -1/2
mint leaves -few
salt -to taste
preparation time :10 min
cooking time :40 min

Method:
- In a pan heat oil and temper with cinnamon,cloves., fennel seeds,cashews,mint leaves,ginger and garlic.
- Add the cubed onions and fry until transparent.
- add the cubed tomatoes and adequate salt and cook until mushy.
- Allow it to cool and grind off into a fine puree.
- In a pan heat oil and fry cubed onions and bell pepper.Once it gets cooked in crunchy consistency .Remove it off and keep it aside.
- Now fry the baby corn in the same pan until it gets roasted lightly. Remove and keep it aside.
- Pour the ground paste into the same pan.
- Add coriander powder,cumin powder,kashmiri chili powder,chili powder,pepper powder and garam masala.
- Mix and cook well. After few minutes add crushed fenugreek/methi leaves.
- Cook until oil oozes out.Then add the roasted baby corn.
- Add adequate water and allow it to boil.When it boils add the cooked onions and bell pepper.
- Serve with Chapathi/Flavored Rice/Naan
