Tomato Rice
Ingredients:
Basmathi rice -11/2 cuptomato - 3 cups finely chopped
onion -11/2 cup finely chopped
curry leaves -few
cilantro -few finely chopped
green chillies -2
kashmiri chili powder -21/2 tsp
hing -pinch
turmeric -1/4 tsp
mustard seeds -1 tsp
peanuts - 3 tbsp
chana dhal/bengal gram -1 tbsp
urad dhal/split black gram-1 tbsp
salt - to taste
oil - 2 tbsp
Method:
- In a pressure cooker cook rice with adequate salt and 3 cups of water for 1 whistle.
- In a pan heat oil and allow mustard seeds to splutter.Temper with urad dhal,chana dal, peanuts,slited green chilies,hing,turmeric and curry leaves.
- Fry for 3 minutes or until roasted and add the chopped onion.Fry until it turns transparent.
- Add the chopped tomatoes.
- After 2 minutes add adequate salt and chili powder.
- Mix well and cook until tomatoes lose its moisture .it will take approximately 10-12 minutes.
- Add the cooked rice to it and mix well.
- Garnish with cilantro.
- Tomato rice is ready to serve.
