Roasted bell pepper soup


red bell pepper                 -1
tomato                             -1/2
chicken/vegetable stock   -11/2 cup
garlic clove                     -1 finely chopped
onion                              -1 1/2 tbsp finely chopped
italian seasoning              -1/2 tsp
salt                                 - to taste
pepper                            - to taste
cream &croutons             -to garnish
olive oil                          -1 tsp


  • Roast the red bell pepper over the flame on all sides until tender and skin peels off easily..If you have an electric stove you can roast it like in picture.

  • Peel the skin ,deseed it and chop roughly.
  • In a blender grind bell pepper and tomato into a fine paste.

  • In a pan heat oil and fry garlic until the raw flavor goes off.

  • Now add onions and saute for few seconds.

  • Add the ground bell pepper-tomato puree into it and cook until it starts bubbling.

  • Add the salt, pepper and italian seasoning and mix well.

  • Pour the chicken stock into it and cook in simmer for 7-10 minutes.

  • Serve hot.Garnish with croutons and fresh cream
