Pagarkai podimas/Bitter gourd Podimas



Ingredients:

bitter gourd/pagarkai  -  3
shallots/small onion    -  5-7
green chili                 - 2
whole red chili          - 2
shredded coconut      -1 cup
mustard seeds           - 1/2 tsp
urad dhal                  - 1/2 tsp
hing                          -pinch
curry leaves               -few
turmeric                    -little
oil                             -1 tbsp
salt                            -to taste


Method:

  • Cut and remove the edges of bitter gourd. Cut into half and remove the seeds in it. Now cut into cubes.
  • Grind cubed bitter gourd, green chilies and shallots in a mixer coarsely.
  • Add required salt to it and leave it for 10 minutes.

  • After 10 minutes Squeeze the water out of the bitter gourd and keep it aside.
  • In a pan heat oil and allow mustard seeds to splutter.
  • Temper with whole red chilies , turmeric, hing, urad dhal and curry leaves.

  • Add the squeezed bitter gourd mixture and fry until half done.

  • When it is half done add in the shredded coconut to it and keep frying.





  • Cook until it loses moisture and gets completely dried off.


  • Serve as a side along with Rice
