Coconut pineapple panacotta


Coconut pineapple panacotta


Ingredients:

Coconut milk  -11/2 cup
pineapple juice-1/2 cup
heavy cream    -1 cup
sugar               -1/2 cup+2 tbsp
coconut extract-1/2 tsp
gelatin              -1 pack unflavored(.25 oz)
pineapple chunks-to garnish
Pineapple syrup  - to garnish



Method:

  • In a bowl mix 1/2 cup of coconut milk with a paket of unflavored gelatin and keep it aside for 5 minutes.


  •  After 5 minutes..

  • Simultaneously ,In a pot mix a cup of whipping cream, a cup of coconut milk and sugar  and cook until the sugar dissolves completely.This should take about 5 minutes.

  • Now take off from the stove and add coconut extract(u can substitute with vanilla extract),pineapple juice and the rested gelatin and mix well without any lumps.

  • Pour it  in your favorite dessert bowls coated with butter spray and allow it to cool.


  • Once cooled down wrap it and refrigerate it for 6 hours or  you can also freeze for 45 minutes to serve soon.

  • Remove from dessert bowls using a spatula and garnish with pineapple syrup & pineapple chunks.


Serves 4-6
