Thai Chicken Red curry

Thai Chicken Red curry


chicken                 - 250 g
red pepper             - 1/4 cup
green pepper         -1/4 cup
onion                     - 1/4 cup
baby corn               - 6-7
coconut milk          -800ml (4 cups)
red curry paste        -4 tbsp.
dried basil               -11/2 tsp
soy sauce                -1 tsp
oil                           -2 tsp



  •  Cut chicken, baby corn, red pepper, green pepper, onions into cubes
  • In a  kadai heat oil and fry red curry paste for few seconds.

  • Add 400 ml(2 cups approx) of thick coconut milk and allow it to boil.

  • When it starts boiling add the cubed chicken,bell pepper(green &red),baby corn and onion to it.

  • When it is half done add the basil and soy sauce.

  • After 2 minutes add the remaining coconut milk and cook for  another 5-7 minutes.

  • Serve over Rice
Serves  6
