Mixed Vegetable Milagu Piratu




Ingredients:

Mixed vegetables                - 5 cups
(cauliflower,potato,green beans,peas,carrots)
onion                                   -1 finely chopped
mustard seeds                      -1/2 tsp
urad dhal                              -1/2  tbsp.
chana dhal                           -11/2  tbsp.
cumin seeds                         -1 tsp
curry leaves                         -few
red chilli                              -2
green chilli                          -3
pepper powder                    -11/2 -2 tsp
turmeric                               -1/4 tsp
ginger garlic paste               -1 tbsp
salt                                       -to taste
hing                                     -1/8 tsp
shredded coconut                -11/2 tbsp.
oil                                        -2 tbsp.
cilantro                                -to garnish


Method:


  • In a pan heat oil and allow mustard seeds to splutter. Temper with cumin seeds, urad dhal, chana dhal, red chillies, green chillies, curry leaves  and hing

  • Add ginger garlic paste and turmeric and fry until raw flavor goes off.

  • Follow it with onions and fry until transparent.

  • Add the washed and cut mixed vegetables to it.

  • Add salt to taste and  liberal amount of pepper powder.

  • Keep cooking covered with a lid stirring in between(sprinkle little water if needed not necessarily)
  • When vegetables are almost done add shredded coconut and mix well. Garnish with cilantro.


  • Serve as a side with Rice.
