Baingan Bartha
Ingredients:
eggplant -1
onion -2
tomato -2
peas -1 cup
coriander powder -11/2 tsp
cumin powder -1/2 tsp
chilli powder -1-11/2 tsp
garam masala -1/2 tsp
salt -to taste
turmeric -1/8 tsp
cumin seeds -1/4 tsp
garlic -2 cloves
ginger -1/2 inch
cilantro -to garnish
oil -2 tsp
coriander powder -11/2 tsp
cumin powder -1/2 tsp
chilli powder -1-11/2 tsp
garam masala -1/2 tsp
salt -to taste
turmeric -1/8 tsp
cumin seeds -1/4 tsp

cilantro -to garnish
oil -2 tsp
Method:
- With the fork puncture the eggplant all around and brush with oil.
- Preheat oven to 375 f and cook for 35 minutes turning in between.
- You can also show over the flame on a stove equally on all sides.
- Once the eggplant is cooked peel the skin and mash the eggplant thorougly.
- In a kadai heat oil and allow cumin seeds to splutter.
- Add finely chopped onions and fry until golden brown.
- Add the shredded ginger and garlic and fry until the raw flavor goes off.
- Add the tomatoes and cook until mushy.
- Follow it with salt,chilli powder,cumin powder,coriander powder ,turmeric powder and mix well.
- Add little water and cook for few minutes .now add the mashed eggplant to it and mix well.
- Put the peas with little water and cook for five minutes.
- Garnish with cilantro.
- Squeeze little lemon juice and finely chopped onions(optional)
- Serve with any Indian Bread
