Bitter gourd curry /Pagarkai curry

Bitter gourd curry /Pagarkai curry

Bitter gourd          -1/4 kg
Onion                   -2 (chopped)
Tamarind              -lemon size
Oil                        -2tbsp
turmeric powder   -1/4tsp
salt                        -to taste
sugar                     -1 tsp

Roasting and grinding
Red chili               -8 to 10
Chana dal             -1 1/2 tbsp
Onion                   -1/2
garlic cloves         -3
Coconut                - 2tbsp (shredded or powder)
oil                         -2tsp

  • Cut the pagarkai into small pieces and put into the bowl  add turmeric powder,salt and tamarind juice.
  • Then cook it in the microwave  for 6 minutes.
  • Heat 2tsp of oil in a pan and roast the ingredients given under roasting and grinding until golden.
  • Once it gets  cool down blend it into a fine paste.
  • heat 2 tbsp oil in kadai and fry  chopped onion until transparent 
  • Then add the cooked pargarkai , stir well and cook in slow flame.
  •  fry until  pagarkai changes color 
  •  add the ground paste  mix well and cook for 3 minutes
  • add sugar,  salt.
  • Cook until the curry becomes dry
  •  garnish with coriander leaves.
