Tindoora fry/kovaikkai varuval

 

Ingredients:

Tindoora/kovaikkai          - 400g
Onion                                -1/4 cup finely chopped
ginger garlic paste            -1tsp
curry leaves                      -few
mustard seeds                   -1/4tsp
urad dhal                           -1/2 tsp
cumin seeds                     -1/4 tsp
green chillies                    -5-6
turmeric                            -1/8 tsp
coriander powder              -1 tsp
salt                                     -to taste
oil                                      -1 tbsp
 
 

Method:

  • In a pan heat oil and allow mustard seeds to splutter.
  • Follow it with urad dhal,cumin seeds,green chillies,turmericand curryleaves.
 



  • Add the chopped onion and fry until it turns transparent.


  • Add the   ginger garlic paste  and fry until the raw flavour goes off.


  • Put salt and coriander powder and mix well.


  • Add the finely chopped tindoora/kovaikkai .
.
  • and keep frying until well done.

  • Serve as a side with Rice
