Kathirikkai chops/Brinjal chops
Ingredients
Kathirikkai/Brinjal - 400 gonion - 1 cup
tomato - 1 cup
curry leaves - few
coriander powder - 1 tsp
turmeric - little
chilli powder - 1 tsp
Sesame oil - 11/2 tbsp
salt - to taste
For grinding and stuffing:
Grated coconut - 1/2 cupginger -1/2 inch
garlic - 3 cloves
cinnamon - 1 inch
fennel seeds - 1/4 tsp
green chillies - 3
Method:
- In a blender grind the ingredients given for grinding with little salt
- Wash and slice the brinjals into 4 like a cross without actually cutting it.
- Stuff the ground mixture into the brinjals.
- In a pan heat oil and add onion and curry leaves
- After onions turn transparent add salt,chilli powder,turmeric and coriander powder
- After the onion turns brown add chopped tomatoes
- Once the tomato becomes mushy add the stuffed brinjals
- add the left over ground masala if any and cook for 4 minutes
- sprinkle water a little and cover it with a lid
- Stir and turn the brinjals frequently sprinking water when needed
- Cook until the brinjals are completely done
- Serve with Rice
its good combination for roti and idli also
