HEALTHY LUNCH WITH CHICKPEAS
A lunch bowl with protein rich chickpeas is super healthy and delicious .Here we have shared two recipes of chickpeas a salad and a soup. It's more like having a balanced diet for your lunch.
CHICKPEA SALAD:
INGREDIENTS:
cooked chickpeas - 1 cup
Cucumber -1/2 cup diced
onion - 1 diced
tomato -1 diced
crumbled paneer-1/2 cup
For Salad dressing:
olive oil -2 -3 tbsp
salt -to taste
pepper -to taste
chaat masala-1/4tsp
lemon juice- 11/2 tsp
Method:
- In a bowl mix all the ingredients listed under for salad dressing together.
- In a serving bowl add cooked chickpeas, onion ,tomato ,cucumber and crumbled paneer.
- Drizzle in the prepared salad dressing into the salad bowl and mix well.
- Serve the salad
- You can also put it in with your chapathi/Tortilla and roll it as a wrap
CHICKPEA SOUP
INGREDIENTS:
Cooked chickpeas - 1 cup
onion- 1finely chopped
tomato -1 finely chopped
garlic cloves - 1 finely chopped
carrots -1 finely diced
cucumber -1/2 cup diced
olive oil -1 tbsp
salt-to taste
pepper - to taste
cumin powder - 1/2 tsp
METHOD:
- In a pan heat oil and add finely chopped garlic and sauté until it turns translucent.
- then add in chopped onions and the carrots and sauté until the onions turns translucent.
- Put in the finely chopped tomatoes and cook until it turns mushy.
- Add in the cucumber/zucchini , salt ,pepper and cumin powder to it.
- After a minute add cooked chickpeas and a cup of water from cooked chickpeas / vegetable stock
- Cover and cook it in simmer for 10 minutes.
- Garnish with cilantro and pepper powder
- Serve hot
