HEALTHY LUNCH||FOOD FOR ULCER||SUNBERRY LEAVES RECIPE||MANATHAKKALI KEERAI


This lunch menu ,is great for anyone but for those who have ulcer , this has such healing values.I personally had ulcer and consumed this everyday for one whole week and i recovered completely.It's my mom's recipe and i did the same when my son was having stomach ulcer consuming so much of spicy food.

PREPARING COCONUT MILK:

Take one full coconut and shred it.Add 21/2 cups of water and blend it and extract thick coconut milk out of it.Keep it in a serving bowl and use it over kanji rice while serving.

Again add another 21/2 cups of water to the strained coconut ,blend again strain thin coconut milk.

KANJI RICE:

INGREDIENTS:

Rice -1 cup
thin coconut milk -21/2 cups
fenugreek seeds-1 tbsp
garlic clove-3
yellow lentils-1/4 cup
salt-to taste

Method:

To a pressure cooker add thin coconut milk, fenugreek seeds , garlic clove, washed yellow lentils and a cup of rice with adequate salt and pressure cook for 1 whistle.


SUNBERRY LEAVES CURRY :

INGREDIENTS:

Sunberry leaves/manathakkali keerai -1 bunch
yellow lentils-1/3 cup 
shredded coconut-1/2 cup

To temper

coconut oil- 1tbsp
mustard seeds-1/4 tsp
white lentils -1/4 cup
red chili -2

METHOD:

  • add 11/2 cup water to kadai .Add washed yellow lentils and cook for 5 minutes
  • After 5 minutes , add the washed sunberry leaves.
  • Cook until the leaves are well cooked and add adeuate salt.
  • Temper mustard seeds, white lentils and red chili in coconut oil and pour over the curry.

To serve:



Take as much as kanji rice you need , pour in the thick coconut milk over it and keep sunberry leaves curry as side.
