Bittergourd Thokku/Pagarkai Thokku
Bittergourd thokku /Pagarkai thokku is a flavorful curry that even haters ofbitter gourd would not hesitate to have.The curry has a nice combination tangy/sweet &spice flavors that actually camouflages the bitterness of the bitter gourd.
Ingredients:
Bitter gourd -4Tomato -3 finely chopped
Shallots -2 tbsp
Oil -3 tbsp
Salt -to taste
Chili powder -2 tsp
Grated Jaggery -1 tsp
Tamarind juice -1/4 cup
To Roast and Grind:
rice -1 tsp
toor dhal -1 tsp
cumin seeds -1/2 tsp
toor dhal -1 tsp
cumin seeds -1/2 tsp
Preparation Time:10 min
Cooking Time : 20 min
Method:
- Dry roast Rice, Toor dhal and cumin seeds until nice aroma comes.Then blend it into a fine powder.
- Cut the edges and discard. Scrape off the skin and remove the seeds.Chop it into cubes.
- In a pan heat oil and fry the cubed bitter gourd and salt .Fry until tender.
- Add the chopped shallots and turmeric.
- Saute for a minute.Add the finely chopped tomatoes and chili powder.
- Cook until mushy and add the tamarind juice.
- When the gravy thickens add the ground powder and jaggery.
- Cook until oil oozes out.
- Serve with Rice.
Serves 3
