Bittergourd Thokku/Pagarkai Thokku

Bittergourd thokku /Pagarkai thokku is a flavorful curry that even haters ofbitter gourd would not hesitate to have.The curry has a nice combination tangy/sweet &spice flavors that actually camouflages the bitterness of the bitter gourd.



Ingredients:

Bitter gourd                   -4
Tomato                          -3 finely chopped
Shallots                          -2 tbsp
Oil                                 -3 tbsp
Salt                                -to taste
Chili powder                 -2 tsp
Grated Jaggery              -1 tsp
Tamarind juice               -1/4 cup

To Roast and Grind:

rice                                -1 tsp
toor dhal                        -1 tsp
cumin seeds                   -1/2 tsp

Preparation Time:10 min
Cooking Time     : 20 min

Method:

  • Dry roast Rice, Toor dhal and cumin seeds until nice aroma comes.Then blend it into a fine powder.


  • Cut the edges and discard. Scrape off the skin and remove the seeds.Chop it into cubes.
  • In a pan heat oil and fry the cubed bitter gourd and salt .Fry until tender.


  • Add the chopped shallots and turmeric.

  • Saute for a minute.Add the finely chopped tomatoes and chili powder.



  • Cook until mushy and add the tamarind juice.

  • When the gravy thickens add the ground powder and  jaggery.



  • Cook until oil oozes out.
                                   
  • Serve with Rice.
