Grilled cauliflower gravy
Ingredients
For marinating:
Cauliflower -1
ginger garlic paste -11/2 tsp
salt -to taste
chili powder -1 tsp
corn flour -2 tsp
non stick spray -for grilling
For gravy:
Onion -1 cup
Tomato -11/2 cup
ginger garlic paste -1 tsp
green bell pepper -1/2 cubed
coriander powder -1 tbsp
chili powder - 11/2 tsp
garam masala -1/4 tsp
turmeric -pinch
salt -to taste
heavy cream -2 tbsp
clove -2
bay leaf -1
star anise-1/2
ginger garlic paste -1 tsp
green bell pepper -1/2 cubed
coriander powder -1 tbsp
chili powder - 11/2 tsp
garam masala -1/4 tsp
turmeric -pinch
salt -to taste
heavy cream -2 tbsp
For tempering:
oil -1/2 tbsp
cinnamon-1/2 'clove -2
bay leaf -1
star anise-1/2
Method:
- Cut cauliflower into florets and blanch in boiling water for 2 minutes.strain immediately and wash in cold water to prevent further cooking.
- Marinade the cauliflower with the ingredients for marinade for at least 20 minutes.
- In a grill spray some non stick spray and grill the marinated cauliflower in batches for 3-4 minutes
- In a pressure cooker heat oil and temper with the tempering ingredients.
- add oil and cook until it turns golden brown.
- Fry ginger garlic paste until raw flavor goes off.
- add the tomatoes and cook for a minute.
- Now add adequate salt,coriander powder,chili powder,garam masala, turmeric and mix well.
- cook until oil oozes out.add 2 cups of water and pressure cook for a whistle.
- After the pressure goes off open the cooker and add the grilled cauliflower and cubed bell peppers
- Cook for another 5 -7 minutes.add heavy cream for extra flavor.
- Garnish with cilantro.Serve with Chapathi/naan/fried rice varieties.
