Tomato Rice



Ingredients:

Basmathi rice                  -11/2 cup
tomato                           - 3 cups finely chopped
onion                              -11/2 cup finely chopped
curry leaves                    -few
cilantro                           -few finely chopped
green chillies                   -2
kashmiri chili powder      -21/2 tsp
hing                                -pinch
turmeric                          -1/4 tsp
mustard seeds                 -1 tsp
peanuts                          - 3 tbsp
chana dhal/bengal gram    -1 tbsp
urad dhal/split black gram-1 tbsp
salt                                 - to taste
oil                                  - 2 tbsp


Method:

  • In a pressure cooker cook rice with adequate salt and 3 cups of water for 1 whistle.
  • In  a pan heat oil and allow mustard seeds to splutter.Temper with urad dhal,chana dal, peanuts,slited green chilies,hing,turmeric and curry leaves.

  • Fry for 3 minutes  or until roasted and add the chopped onion.Fry until it turns transparent.

  • Add the chopped tomatoes.

  • After 2 minutes add adequate salt and chili powder.

  • Mix well and cook until tomatoes lose its moisture .it will take approximately 10-12 minutes.

  • Add the cooked rice to it and mix well.

  • Garnish with cilantro.

  • Tomato rice is ready to serve.
