Chicken varuval/Chicken fry
Ingredients:
onion -1 cup sliced
tomato -1 cup finely chopped
coriander powder-1 tsp
pepper powder -1/2 tsp
salt -to taste

oil - 1 -2 tbsp

For marinating:
chicken -1/2 kg
turmeric -1/4 tsp
chilli powder -1 tsp
salt -to taste
lemon juice -1/2 tbsp.
For roasting and grinding:
coriander seeds -1 tbsp
red chillies -2
shredded coconut-2 tbsp
garlic cloves -5
ginger -1/2 inch
cinnamon -1
cloves -2
cardamom -1
curry leaves -few
oil - 1 tsp
curry leaves -few
oil - 1 tsp
Method:
- In a bowl marinade chicken with marinading ingredients given for marination for atleast 30 minutes.
- In a pan heat oil and roast the ingredients given for roasting and grinding in a order as in pic
- Allow it to cool off and grind it into a smooth paste.
- In a pan heat oil and temper with mustard seeds, cumin seeds and fennel seeds.
- Add the sliced onions and cashews and fry until golden.
- Add the tomatoes and cook until mushy.
- Add the coriander powder and desired salt.
- Cook until mixed well and add the ground paste.
- Cook for 3 minutes and add the marinated chicken.
- Keep cooking mixing now and then until the chicken is well done and masala dries completely.
- Garnish with cilantro.
- Serve as a side with Rice
