Gongura Pickle

Gongura Pickle 

 

Ingredients:

Gongura leaves    -   450 g
red chilli powder  -  1/2 cup
salt                        - 1/4 cup adjust to your taste
tamarind pulp       -  1 tbsp
garlic cloves         -  10
oil                         -  1/2 cup

For powder

Coriander seeds   -   1 tbsp
fenugreek seeds   -   1/2 tsp

For tempering

mustard seeds      -   1  tsp
urad dhal             -    1 tsp
cumin seeds         -    1 tsp
red chillies           -    3
curry leaves          -  few
hing                       -  1 tsp
turmeric                -  1 tsp
oil                         -   1/2 cup
 

Method:

  •  Wash and cut the gongura leaves and pat dry it leaving for sometimes.



  • Dry roast criander seeds and fenugreek seeds until a nice aroma comes out.



  • Cool  off  and grind it into a fine powder.



  • In a pan heat oil and fry gongura leaves until it shrinks well and oil oozes out.

  • In a pan heat 1 cup of water with tamarind pulp and allow it to boil for 10 minutes



  • Grind the boiled pulp with the garlic cloves coarsely and keep it aside



  • Again heat 1/2 cup of oil and temper with musatrd seeds,urad dhal,cumin seeds,red chillies,hing,curry leaves and turmeric.



  • Pour the tempering into clean dry bowl
 




  • Mix chilli powder,salt and ground coriander fenugreek powder   to it




  • Add the fried gongura leaves and mix well



  • Mix the tamarind garlic pulp to it and mix well

  • Store in an airtight container
