Chicken Eggplant stir fry


Ingredients:

Chicken                      - 150 g
Egg plant                    -    1  long
onion                           -  1 cubed
Garlic                          -  2 clovesfinely chopped
ginger                         -   1/2 inch finely chopped
soya sauce                  -  1 tbsp
hot chilli sauce           -   1 tsp
vinegar                       -   1 tbsp      
ajinomoto                   -   1 pinch
bell pepper                 -   1 cubed
salt                             -   to taste
Pepper                       -   1 tsp
oil                              -    2 tsp




Method:

  • Cut chicken into cubes and marinade with salt and pepper
  • In a pan heat oil and add the chopped ginger and garlic

 
  • After the raw smell goes off add the marinated chicken cubes

  • Fry for 7- 10 minutes and put the diced egg plants

  • Fry for another 3 minutes and add the diced onions and bell pepper

  • After 5 minutes add 1/2 cup water to it

  • NowAdd the soya sauce, hot chilli sauce, ajinomotto and vinegar to it stir well.

  • Cook for another 10 minutes

  • Serve with Rice
