Sambar is a famous south Indian delicacy  that is made with combination of veggies ,lentils and a special spice mix 'sambar powder'.It is such a comforting and soothing  dish to have as any time of the meal.


Toor dal                 -       1  cup
shallots                   -        10
green chillies         -        2
curry leaves           -         4
mixed vegetables(carrot,drumstick,bottlegourd)
Tomatoes              -          2  medium
cilantro                  -         chopped
salt                         -        to taste
sambar powder      -        2 tbsp

For tempering:

oil                            -          2 tbsp
mustard seeds         -           1/2 tsp
urad dal                   -           1/2 tsp
cumin seeds            -            1/4 tsp
fenugreek seeds      -            1/4 tsp
peppercorns            -            1/4 tsp
hing                         -            1/4 tsp
turmeric                  -             1/4 tsp


  • in a pressure cooker take 1 cup of washed toor dal with 4 cups of water and little oil(1/2 tsp) and pressure cook for 2 whistle

  • In a  pan heat oil and add the first five items of tempering
  • Now add hing and turmeric
  • now add the onion,slitted greenchillies and curry leaves

     After a minute and the mixed vegetables (of your choice) and desired salt.
Fry until vegetables are half done

now add finely chopped tomato,cilantro and a spoon of tamarind juice

 Stir in well and add 2 tbsp of sambar powder.

cook until the sambar powder blends well and tomato gets mashed off

Now add the pressure cooked toor dhal

Add 2 cups of water or more according to the desired consistency
Cover the kadai and cook on medium flame for 15 minutes
Garnish with cilantro

Serves                6
