Coconut Rice

Ingredients:

Basmathi Rice        -    11/2 cup
coconut milk          -    1 cup
salt                          -    to taste

FOR TEMPERING:
oil                           -    1 tsp
mustard seeds         -    1  tsp
chana dal                -    2 tbsp
peanut                     -    2 tbsp
urad dhal                -     1 tbsp
green chillies         -      2
red chillies             -    2
curry leaves           -     few
shredded coconut   -     3 -4 tbsp
chopped cilantro     -    few

Method:

  • In a pressure cooker add washed Basmathi rice ,coconut milk and 11/2  cups of water and desired salt and cook for 1 whistle
  • In a pan heat oil add mustard seeds ,red chillies and allow it to splutter
  • Then add urad dhal,chana dhal,peanuts curry leaves
  • After it gets roasted add the shredded coconut and cilantro and fry for a minute
  • After the pressure goes off open the cooker and mix the tempering with the cooked rice well




serve it with Potato fry or any kind of side dish you like to have
